Some Nasi Ayam Hainan story

i did it. im back in the cooking game. something ive been putting aside for quite a while now.
yesterday manage to make hainan chicken rice. oh yeah baby, and gawd, it taste good. i better pen the recipe down before i forgot about it.
HAINAN CHICKEN RICE ( SUPER HOT )
The rice :
grind 3 cloves of garlic, 4 shallots and ginger
heat the pan, put in some oil and fry til golden
put in the rice, gaul
at the same time boil water and add a cube of chicken stock in the rice cooker
cook the heated rice in the rice cooker
The Chicken :
prepare the chicken needed
heat the periuk, put in some oil
fry sliced garlic, shallots and ginger til golden
put in water ( adequate enough to cover the chicken )
put in the soup packet/bag
put in salt, when it has started to boil, slow down the fire and put in chicken
The Chilli Sauce :
5 cili merah besar
5 cili padi
ginger
4 cloves of garlic
5 shallots
add in sugar and salt, lil bit of water
blend everything together
then add in adequate fish sauce, and finally add in a lil bit of tamarind juice
The Soy Sauce :
Take the kuah from the chicken soup
add in soy sauce
add in fish sauce
add in some blended ginger
The Bean Sprout :
necessary fresh bean sprout
put in water in the pan
put in salt
gaul in the pan but not too cooked, keep it crunchy
angkat, add in sesame oil if u like
or u can put lil bit of fish sauce
and then sprinkle lotsa white pepper on top
the chicken td, after u hav cook in the soup adequately,
can angkat and chop it
the soup can be used for kuah
WALLA! there u hav it. very2 easy to make. shall be updating wif more dish to come ( hopefully ). cheers~
